Fine French Fare and the King of All Cognacs at La Mer

It's that time of the year again... when the islands' top chefs have the sense to realize that elsewhere on this big blue planet there are seasons a-changing and colder winds a-blowing. And with this (again, elsewhere) drop in temperature, menu items change from steamed fish in opaque sauces, to heartier fare like quail, venison and foie gras, cloaked in sauces so thick you couldn't slurp it through a straw (if that sort of thing were allowed at fine dining establishments).

Yves Garnier is one of these chefs. He also happens to helm one of O'ahu's most romantic, most oceanfront and certainly most French eateries. La Mer constantly (and rightly so) earns top awards for it's refined fare, all of which is expertly crafted by the authentically French Garnier.

This month, La Mer kicked off it's annual ode to the world's most expensive liquor (and France's most storied King), Louis XIII de Rémy Martin. If you've only heard about it, well, this is your chance to experience an entire menu built around the richness of cognac's most storied blend. Chef Garnier has crafted a menu so delectable they could have printed it on edible paper and we're certain it would taste... palatable.

Through December 31, 2008, you too can plunk down a mere $150 (without wine and cognac tasting; $190 with) for a meal you won't soon forget. After all, some bars charge twice that for just a glass of the sweet stuff in the Baccarat crystal bottle. And yes, the meal does end with a sample of Louis XIII.

Just to tempt you, a glimpse of what awaits at La Mer through the end of the year: "Croustillant of Lobster with Aquitaine Caviar", "Red Mullet on an Artichoke Terrine with a Compote of Tomato, Fennel and Saffron", "Hamachi Medallion 'Meuniere' with Risotto and Chanterelle Mushrooms", "Tournedos of Venison with Chestnut Mousseline and Grand Veneur Sauce". If Garnier promises to make you a special Rémy Martin sorbet, will you go? Consider it done.
