10-Course "Ultimate Meal"... And A Taste Of The Good Life at La Mer

Ah, dining for a cause. There's no better excuse. Ever heard of Remy Martin Louis XIII? It's that fancy looking bottle on the very tip-top of your favorite bar. Yep, the one that costs $200 per glass (if not more). The folks at Rホmy Martin have gotten together with the folks at Halekulani to offer the "Rホmy Martin Ultimate Dinner", available now through December 30, 2007. For $190 (still less than a glass at your bar), you can dine at Hawaii's only AAA Five-Diamond awarded restaurant, La Mer, and experience a 10-course dining extravaganza.

We chose to experience the dinner on a lovely October evening, the first night of its launch. The evening began with taste of fresh salmon and lobster with Chablis aspic, served over paper-thin shavings of yellow beet carpaccio. As with any fine meal, foie gras followed, served over thinly sliced green asparagus and drizzled with truffle and shallot buerre blanc. Next, a unique veal cheek prepared with tangy vinaigrette over petit frisホe salad and dotted with capers caught our attention.

It is at this time that we'd like to interject Chef Yves Garnier's unparalleled ability to satiate every flavor receptor on your palate in one sitting, yet at such a pace that you feel content nor too full at any one point in the 10 courses. He is a master in the kitchen, and it is through special menus such as this – where similar chefs might balk at the defined structure –hat Garnier truly shines.

We'd like to leave some surprises for potential ultimate dinners, but let's just say there is no shortage of Angus beef, sea bass, nor scallop and shrimp wrapped in Serrano ham over risotto with Rホmy Martin-scented lobster coulis.

If all this wasn't "ultimate" enough, than the selection of fine French cheeses is enough to have you loosening the belt a notch. Oh, and yes, the meal ends with a glass of Louis XIII. And yes, it counts as one of your ten courses. Don't be greedy! A portion of the proceeds are donated to the Rehabilitation Hospital of the Pacific.
